Paweł Łukomski,
head chef at Kuchnia Otwarta restaurant in Lublin, took on the management role in July 2024. Previously, he completed internships at numerous Michelin Guide-awarded restaurants across Poland, including Bottiglieria1881**, hub.praga*, and Bez Gwiazdek, as well as under legendary Chef Dariusz Barański at the Hotel Warszawa.
Paweł’s cooking style is based on strictly local produce, utilizing classic French techniques with a great emphasis on sauces, while also drawing inspiration from so-called Nordic Cuisine—a culinary vision developed within Nordic fine dining that relies largely on the delicacy and flavor of high-quality ingredients.
